Fried Pumpkin Blossoms


Ingredients
12 large fresh pumpkin blossoms
2/3 cup self-rising flour
2 tablespoons water
2 large eggs, beaten
1/2 teaspoon good quality curry powder, optional
Salt and pepper to taste
Corn oil for frying


Directions
In a medium bowl, mix flour in water and eggs until smooth. Heat 1/2 inch of oil in a frying pan over medium-high heat. Dip three pumpkin blossoms at a time in batter to coat, fry on each side until crisp and golden. Drain on paper towels. Serve as a side to grilled meats or as a topping for salads.
