Tender dumplings are filled with sautéed mushrooms and wrapped in soft egg dough, then paired with a bold coconut and paprika sauce that brings heat, depth, and comfort to every bite.

Ingredients

Filling:

  • 5 cups chopped button mushrooms (white or brown)
  • 2 tablespoons vegetable oil
  • 1 yellow onion, diced
  • 5 green onions, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper, or to taste
  • Salt and ground black pepper to taste

Dough:

  • 1 large egg yolk
  • 1 tablespoon vegetable oil
  • 3 ¼ cups all-purpose flour (more as needed)

Sauce:

  • 2 cups coconut milk
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper, or to taste
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh cilantro (optional, for garnish)

Directions

Mushroom Filling: Heat oil in a skillet over medium heat. Add onion and cook until golden, about 5 minutes. Add mushrooms and green onions; cook until mushrooms release their liquid, about 10 minutes. Stir in thyme, coriander, cayenne, salt, and pepper; cook 2–3 minutes to develop flavor. Drain excess liquid, then pulse the mixture in a food processor until finely ground.

Egg Dough: In a bowl, whisk egg yolk, oil, and 1½ cups lukewarm water. Place flour in a large bowl, make a well, and add the egg mixture in thirds, mixing gently. Adjust with flour or water as needed. Knead on a floured surface for 3 minutes until soft and smooth. Cover and refrigerate for 45 minutes.

Dumpling Assembly: On a floured surface, divide dough into three portions. Roll each thin, then cut circles with a pastry cutter. Place ½ teaspoon filling in the center, fold, and seal the edges. Boil dumplings in salted water until they float (2–4 minutes). Drain and set aside.

Spicy Sauce: In a saucepan, combine coconut milk, vinegar, Worcestershire sauce, paprika, garlic powder, cayenne, salt, and pepper. Simmer 15–20 minutes until slightly thickened. Add cilantro if desired.

Serving: Serve hot dumplings drizzled with spicy South African sauce. Garnish with cilantro for a fresh finish.
