Eggplants are a traditional vegetable in Chad where the highest populations are found in the southwest, particularly around Lake Chad and the capital N'Djamena. 

The African eggplant originates from Central Africa; other local names for the eggplant vegetable are gauta, yalon bello, igbagba and nakati just to name a few. 

Eggplant Stew is an easy African food recipe from Chad using eggplants cooked with okra and peanut butter.

Ingredients

1 eggplant cubed

2 cups fresh okra, chopped

10 plum tomatoes, chopped

1 large green pepper chopped

2 tablespoons smooth peanut butter

Salt, black pepper and cayenne pepper to taste

Water to cover


Directions
Add all ingredients to a large pot except peanut butter and tomatoes. Bring to a boil, reduce to a simmer and cook for half an hour, or until the vegetables are tender. Mix peanut butter until a smooth sauce forms. Add tomatoes and simmer for 10 minutes longer. Serve with white or brown rice or with boiled green plantains.
