Tender Mutton Stew Recipe

Ingredients
3 pounds lamb or mutton stew meat
2 medium tomatoes, peeled and chopped
1 diced carrot
2 medium diced sweet potatoes
1 cup white mushrooms, sliced
1 red onion, chopped
1 garlic clove, crushed
1/2 teaspoon thyme
2 teaspoons sea salt
1 bay leaf
2 cups of water

Directions
Place lamb or mutton and vegetables in a slow cooker. Mix salt, garlic, thyme, and bay leaf into water and pour over lamb and vegetables. Cover and cook on low 8 to 9 hours, until lamb, is tender. Serve with rice.
