Rwandan Hard-Boiled Eggs Fried with Onions and Tomatoes Recipe

Rwandan Hard-Boiled Eggs Fried with Onions and Tomatoes
Ingredients
- 4 hard-boiled eggs, peeled and sliced in half
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the chopped tomatoes and minced garlic to the skillet, and cook for another 5 minutes until the tomatoes start to soften.
- Add the sliced hard-boiled eggs to the skillet, and gently stir them into the tomato and onion mixture.
- Cook for an additional 5 minutes, stirring occasionally, until the eggs are heated through.
- Season with salt and pepper to taste.
- Serve hot.
