Rwandan Hard-Boiled Eggs Fried with Onions and Tomatoes

Ingredients

  • 4 hard-boiled eggs, peeled and sliced in half
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the chopped tomatoes and minced garlic to the skillet, and cook for another 5 minutes until the tomatoes start to soften.
  4. Add the sliced hard-boiled eggs to the skillet, and gently stir them into the tomato and onion mixture.
  5. Cook for an additional 5 minutes, stirring occasionally, until the eggs are heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot.
