Chicken-Groundnut-Stew African Food Recipe

Ingredients 

2 large cut-up chicken breasts 

1 medium sliced onion 

1 medium chopped green pepper 

1 cup smooth peanut butter 

5 cups chicken broth 

2 cups baby carrots 

1 teaspoon salt 

1 teaspoon red pepper flake 

1 tablespoon tomato paste 


Directions 

Boil chicken in 4 cups of chicken broth in a large pot for 10 minutes. Add onion, chopped pepper, carrots, tomato paste, salt, and cayenne pepper to chicken broth. Cook for 10 minutes. Add remaining broth to peanut butter and mix well. Add peanut butter to remaining ingredients and simmer for 10 minutes. Serve over rice or with Injera bread.
