Spicy Carrot Apple Oelek Sambal

Ingredients
2 cups finely grated carrots
2 cups grated sweet apples
1/4 cup lemon juice
1/2 teaspoon salt
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon brown sugar
3 chopped hot chilies
 
Directions

Toss 2 cups finely grated carrots and 2 cups grated sweet apples with 1/4 cup lemon juice and 1/2 teaspoon salt. Let sit 1/2 hour, then squeeze with hands and discard any excess liquid. Combine with 1 teaspoon minced garlic, 1 teaspoon minced ginger, 1 teaspoon brown sugar and 3 chopped hot chilies, mix well. Refrigerate 2 hours before serving. Serve with bread, meats, and vegetables as a dip.
