With space at a premium in the cities, besides corn and beans, cabbage has many simple recipes in the everyday lives of Zambians. Fried Cabbage Pancakes Recipe. Ingredients.  1 can black eyed peas washed and drained. 2 cups cooked shredded cabbage. 1 cup all-purpose flour. 1 large egg. 1/4 cup finely chopped onion. 1/2 magi cube. Vegetable oil for frying. Directions.  Mix all ingredients well, roll into small size balls, flatten and fry on both sides until golden brown. Drain on paper towels, cool and sprinkle with a little salt if desired.
