What to make with that handful of cornmeal other than cornmeal mush or cornmeal pancakes? Make cornmeal hushpuppies. Cornmeal hushpuppies are a small, flavorful, deep-fried ball made from cornmeal batter. 


Make The African Gourmet yellow plantain cornmeal hushpuppies.

Yields about 10 to 12 fritters.

Ingredients

2 overly ripe yellow plantains

¼ cup onion finely chopped

1 teaspoon minced garlic

2 tablespoons self-rising fine ground cornmeal

½ teaspoon salt

1 teaspoon brown sugar

½-1 teaspoon red pepper flake

 

Directions

In a large deep frying pan, heat 3 inches of vegetable oil on medium or use a deep fryer set to medium heat. Peel and mash the plantains until it resembles a thick paste. Add remaining ingredients. Drop by teaspoonful’s into the hot oil and fry until golden brown, about 1 ½ -2 minutes on each side. Remove fritter from oil and drain on a paper towel.
